In Loving Memory of Giacomo “Jimmy” Bianchi
Age 88, May 7, 1937 to June 24, 2025
It is with profound sadness that the extended Bianchi family announces the passing of our beloved patriarch – “Jimmy” who was a husband, father, grandfather and respected founder of several businesses – the most-well known one being Roma Bakery. Jimmy passed away after a prolonged illness on June 24, 2025, at the age of 88.
Jimmy was born in Medellín, Colombia to Luigi and Inés (née Gonzalez) Bianchi. Jimmy immigrated to the U.S. to fulfill his dreams. He arrived in New York City and eventually settled in Miami. His bakery talents were discovered by the in-flight catering department of National Airlines. Always an entrepreneur – he opened the bakery along with his new wife Mirtha in 1964. Together they founded Roma Bakery – a well-known Miami bakery
His prowess in the kitchen along with his extreme work ethic made the business a success growing to include several outlets. The business was a manifestation of Jimmy’s creativity. He invented Miami pastries, such as guava and cheese pastelitos, which have now become a staple of the city’s culinary scene. The business also served as a bridge for his and Mirtha’s extended family who found employment at the bakery when they first arrived in the US. Jimmy and Mirtha successfully ran the business for over 50 years until they sold it in 2019.
Jimmy is survived by his wife Mirtha, his four children (Filippo, Alexsandro, Jaime and Paola), seven grandchildren (Katrina, Jonathan, Giancarlo, Gabrielle, Jack, Andrew and Dagny) and four great grandchildren (Kaylee, Emma, Samantha and Isandro).

Con profunda tristeza, la familia extendida Bianchi anuncia el fallecimiento de nuestro querido patriarca, “Jimmy”, quien fue esposo, padre, abuelo y respetado fundador de varios negocios — el más conocido de ellos, Roma Bakery. Jimmy falleció tras una prolongada enfermedad el 24 de junio de 2025, a los 88 años.
Jimmy nació en Medellín, Colombia, hijo de Luigi e Inés (de soltera González) Bianchi. Emigró a los Estados Unidos para cumplir sus sueños. Llegó a la ciudad de Nueva York y eventualmente se estableció en Miami. Su talento en la panadería fue descubierto por el departamento de catering a bordo de National Airlines. Siempre un emprendedor, abrió su propia panadería junto a su esposa Mirtha en 1964. Juntos fundaron Roma Bakery, una reconocida panadería de Miami.
Su destreza en la cocina, junto con una ética de trabajo excepcional, convirtieron el negocio en un éxito, expandiéndose a varios locales. El negocio fue una manifestación de la creatividad de Jimmy. Inventó repostería típica de Miami, como los pastelitos de guayaba y queso, que hoy son un elemento esencial en la escena culinaria de la ciudad. El negocio también fue un puente para sus familiares y los de Mirtha, quienes encontraron empleo en la panadería al llegar a Estados Unidos. Jimmy y Mirtha dirigieron exitosamente el negocio por más de 50 años, hasta que lo vendieron en 2019.
Jimmy deja atrás a su esposa Mirtha, sus cuatro hijos (Filippo, Alexsandro, Jaime y Paola), siete nietos (Katrina, Jonathan, Giancarlo, Gabrielle, Jack, Andrew y Dagny) y cuatro bisnietos (Kaylee, Emma, Samantha e Isandro).
La vista pública será el viernes 27 de junio de 2025, de 6 p.m. a 8 p.m. en Van Orsdel Funeral Home, ubicado en 4600 SW 8th Street, Miami, Florida 33134. La misa fúnebre se llevará a cabo el sábado 28 de junio de 2025, al mediodía, en la Iglesia Católica Corpus Christi, 3220 NW 7th Avenue, Miami, Florida 33127.
