Elinor Catherine Knox Easom's Obituary
Elinor Knox Easom, 92, of Miami Springs, Florida was called to heaven
on August 19, 2024. She was born in Miami, Florida, on March 23, 1932.
Elinor graduated from Miami Jackson High School. She went on to study at Florida
State University where she received a Bachelor’s Degree inEducation.
Elinor and Julian were married on June 14, 1957 at Allapattah Baptist Church.
Elinor was employed as a teacher and substitute at local schools, both
public and private, in Miami-Dade County. She worked at Norland High
School, Miami Springs Middle, Hialeah First Baptist, and Miami Springs
High School, teaching mainly Math. After teaching for approximately
40 years, Elinor retired in 1991.
Being a Christian and living her life for Jesus were very important to
Elinor. She was a member of Allapattah Baptist Church, Miami Springs
Baptist Church, and Monterey Baptist Church while living in Tennessee.
At these churches, she served on several committees, taught various
aged Sunday school classes, and was an Assistant Sunday School
Director.
Some of Elinor’s favorite things were to eat ice cream, go shopping,
play board games, watch Wheel of Fortune & Jeopardy, and cheer for
the FSU Seminole Football Team and Miami Dolphins when they played
on TV. She loved spending time with her family and going places with
them, especially when they would visit her and Julian in Tennessee.
She always had a full itinerary of activities to keep everybody busy and
entertained. She didn’t want anybody to be bored while visiting her.
After she and Julian moved back to Miami Springs in 2016, she enjoyed
watching the birds come to the feeder in the backyard. She would get
very excited when her “monkey” (squirrel) would come to eat peanuts
from the feeder.
Elinor is survived by Julian, her loving husband of almost 68 years,
her sister, Joan Mills of Statesboro, Georgia, 3 children, 5 grand-
children, and 8 great-grandchildren, and her devoted Beagle, Ivy Blue.
A Viewing will be held at Van Orsdel (Kendall) on Monday, August 26,
2024 from 4-8 pm. A Celebration of Elinor’s life will be held at 4:30 pm
the same day. Interment will be at South Florida National Cemetery
Tuesday, August 27, 2024.
